We haven’t talked about pancakes here, but that is an oversight which, on this day, shall be rectified because pancakes are sooooo good. Today’s recipe for Apple Sausage Pancakes is one you will enjoy and, I’m sure, decide to keep.

It comes to us from a cookbook of The Baptist Church of Beaufort, where Harry Rowland is pastor. The church is part of Savannah River Association, and the occasion for the cookbook was the church’s 200th anniversary.
This recipe was submitted by Dorothy Hall Hodges, a native of Millen, Ga., but a resident of Beaufort since 1948. Her husband, W.C., is from the area, and they have been members of Beaufort Baptist most of that time. W.C. is retired from civil service at Parris Island.

Dorothy is an active member of Beaufort Baptist. One night a month, the WMU group meets for a light supper and mission program. One of their members, Janice Capps, is a retired missionary to the Far East and did their October program. Many years ago, as a young girl, Janice was a member of Dot’s YWA group. She is available to do mission programs for other churches when invited.
On another day, Dorothy and the OASIS group (Older Adults Sharing In Service) meet for an inspirational program. Another activity that Dorothy and other members enjoy is the crafts group. At their meetings, they make various craft items which are usually given to the local hospice to sell as fundraisers. They also make turbans to give to the local cancer clinic for patients who have suffered hair loss.
Dorothy is also a member of the church’s senior adult choir, the Camellia Garden Club, and Eastern Star.
She and W.C. have two children. Their daughter Judy lives in Moncks Corner in a special care facility because of her health. Their daughter Frankie and her husband Richard Lamprey live in Atlanta. Richard is associated with NASCAR, and they travel a lot to races.
I made these pancakes for breakfast over the weekend, and both my Ed and I liked them. In discussing the pancake recipe with Dot, I asked if more apples could be used. Dot said certainly, and more sausage also. This is an easily made recipe, and with fruit or juice makes a good Sunday morning breakfast, enough to keep your tummy happy until … Sunday Dinner.
Apple Sausage Pancakes
1/2 pound bulk sausage, browned and drained
1/2 cup shredded fresh apple
1 egg
1 cup pancake mix
1/2 teaspoon cinnamon
2/3 cup milk
2 tablespoons cooking oil
While sausage is browning, shred the apple.
In a small bowl, beat the egg on high speed until it is thick and lemon-colored. Stir in the pancake mix, cinnamon, milk and oil. Fold in the sausage and apple.
Pour batter from a 1/4-cup measuring cup onto a hot greased griddle. Cook until bubbles appear, about 2 minutes; turn and cook until lightly browned, about 2 minutes. Serve with syrup of your choosing. Makes 7 to 8 pancakes.
